This Japanese sweets chef runs a traditional wagashi shop in the countryside, just an hour and a half from Tokyo called Wagashi Tsukasa Marushin. Every morning at 6am, he starts making castella, all sparked by his lifelong love for sweets. Now, he’s passing on his knowledge to his grandson to keep the family business alive.
