More Useful Info: 1.\tBoth are great for offsetting the saltiness of soy sauce, removing fishy smells, tenderizing meats, and adds a nice sheen as well. 2.\tThey CANNOT be substituted for each other. However drinking sake can become like mirin if you add sugar/honey/anything sweet. White wine is a good sub for sake. 3.\tBoth are great for offsetting the saltiness of soy sauce, removing fishy smells, tenderizing meats, and adds a nice sheen as well. 4.\tCooking Sake is essentially drinking sake b

Stefan Ng on Instagram: "To be honest, I just eyeball the recipe every time. However, I try to stick to this ratio: 4 tbsp soy sauce 2 tbsp mirin (do not substitute with sake) 1 tbsp brown sugar Pineapple juice, garlic, ginger, and honey are all great ways to jazz up this sauce too. This is enough sauce for 2 people. Splash it over rice, dip fried tempura with it, or glaze it onto grilled or sauteed meats right before you’re done cooking (my preferred method)!"

Miso Salmon (Nobu Style)...this and crispy rice are my go to orders there… Ingredients: •1/4 cup mirin. •1/4 cup sake. •1/3 cup miso paste. •1/3 cup cane sugar. •2 lb salmon (deboned, cut into filets). Directions: 1.- Boil the mirin and sake for 3 min. 2.- Add in sugar and miso. Cook a couple min without boiling. Let it cool. 3.- Pour it all over your fish, cover it VERY tightly and marinate for 24 hrs in fridge. 4.- Broil it (I did 7 min) but every oven is different so keep an eye out. #salmon

this was the highlight of my sunday :)) RECIPE 👇 Miso Marinade 200 white miso 80 sake 80 mirin 30 sugar Boil the sake and mirin to burn off the alcohol. Add the sugar to dissolve and mix into white miso. Cool down before using. Cover 1lb of cod that’s been cut into 1.5inch portions in the miso marinade for at least 20 minutes and up to 1hr at room temperature or up to 1 day in the fridge. Remove from the marinade, pat some off to your pref, and broil until slightly blackened, approx 6 minutes.
